Sake & Koji collaboration event as part of London Craft Week @ Pantechnicon, Knightbridge
The event was held on 7th October 2020 as part of London Craft Week as well as one of the opening event of Pantechnicon, a fabulous place to explore Nordic and Japanese creativity and craftsmanship.
In our 40 minute-slot, we gave a presentation to introduce the wonderful world of koji fermentation and brief workshop of shio-koji making. We also provided sampling dishes using koji, together with doburoku homemade sake.
The event was fully booked with long waiting list. We were pleased to be able to see many happy faces especially after long lockdown
A “Koji and Miso” educational event is being planned for children living in Cambridge in May 2021.
