Online Organic Miso Making Workshop

 I will be hosting an online organic miso workshop!

 

My name is Haruko from The Koji Fermenteria. As you can imagine from our name, we specialise in koji; growing it and using it with various foods to explore even more delicious and healthy ways to enjoy it in day to day life.

 

Miso is an extremely unique food element packed with all five tastes; sweet, salty, bitter, sour and umami. It has a long history in Japanese food culture and is one of the most traditional Japanese condiments to provide depth in flavour. In recent years, chefs from around the world seem keen to include it in their recipes for flavor, umami, or hidden tastes.

Its health benefits have long been well-recognised in Japan without the knowledge of modern science. This is proven by lots of old proverbs such as “miso makes doctors in trouble” and “you’d better spend money for miso than for medicine”, “miso makes 4km walk easy” etc. In more modern objective language, miso enriches our gut with beneficial bacteria which in turn robustly supports our physical and mental health. 

 

In this 2-day workshop you will make about 800g of organic rice miso.

After registration, you will be sent a miso-kit by post which provides all ingredients you need for miso making.

On day 1, I will be presenting a lecture about miso (For details, please refer below).

After the lecture, you will soak your soybeans and cook them to prepare for day two of the workshop.

The second session will be more practical and we will be making miso together.

 

A few important notes…

  • A Facebook account is pre-requisite. I am aware that this may make things difficult for some; however, unfortunately at the moment I have not found a medium of learning which exceeds the functionality of Facebook.

A wide opening container (Roughly 1.5L)

A Pan (Eg. Pressure cooker, Pasta pan – If you have any doubt, please inquire)

A Potato masher (optional)

Other types of miso kits are also available upon request with a charge of £18. (barley miso, soybean miso, sweet short-term miso)

【Online Miso Making Class

Please enroll and secure your place through thekojifermenteria.com (dates section). The places are limited to 8.

 

I will then send you an invitation to a private Facebook group and messenger group. To do this, we will have to be connected on Facebook – please accept my friend request on first, this will then enable you to accept the group invitation.

 

On day 1, I will explain the following using a powerpoint presentation and video clips.

  • What is miso?
  • Why would you make your own miso?
  • Definition of different kinds of miso
  • Miso making procedure
  • Miso’s fermentation mechanism
  • How to store miso and what will happen during the fermentation.
  • Choice of tools/equipment and ingredients
  • How to soak soybeans and cook miso (cooking soybeans is one of themost important steps)

 

You will then start soaking your soybeans and cook them for the following day.

 

On day two, we will make miso together.
