I have always been fascinated by the sceneries with snow and frost. They are much more appealing to me than gems and jewels.

Ever since I started my koji activities, my biggest aspiration has always been to witness how wonderfully koji would flourish outside native Japanese context. This is exactly what I experienced last week and it was far beyond my expectation !
Last week I was fortunate enough to dine at @humolondon opening family and friend event with my husband. Humo is a new restaurant to be publicly opened this week, run by a talented Colombian-born chef @_millerprada who was trained with renowned Michelin star chef Kazutoshi Endo. I have been collaborating with Miller last few years sharing and exchanging koji experiences etc. The restaurant has very unique concept that all cuisines are cooked by wood fire without gas and electricity. Menu is predominantly product-led rather than by specific cuisine but influenced by precision of Japanese cooking technique as well as Miller’s Columbian background (described in Big Hospitality on 9 Dec 22)
There are a lots of good things I want to tell, but it is going to be endless 😅 so I just focus on the menu which involves koji.
“Amazake cocktail”
I never expect amazake (citric in particular) to be combined with champagne and mugi shochu, let alone the fragrance of birch! It is so refreshing with light touch backed by subtle tartness and umami from shiro koji. Well, shiro koji is used to make shochu so naturally they bounds to be a perfect pair. How did I not think of it. The cocktail is so beautifully designed and I am taking my hat off with respect!
“Mugi koji ice cream sandwiched with rum baba”
I was so privileged to be a first person to taste this heavenly wonderful dessert (this was not on the menu yet)
Deep umami and gracefully creamy ice cream is  a perfect match with rum baba! I was explained that the recipe is still under development (for me it was already perfect!) and can’t wait to try the completed version (it will be beyond my imagination 😊)
This restaurant and these menu are absolutely not to be missed. I can’t recommend strong enough to rush to book your table!

My first ferment of year 2023 was Mikawa Mirin whi My first ferment of year 2023 was Mikawa Mirin which I wanted to make for a long time but never brought out my courage to make one due to its ridiculous sound of ingredient ratio (koji, g.rice, liquor = 1:9:5, Is this really possible!?😳)
Among Japanese condiments, mirin is perhaps the most difficult one to explain. It is often explained as "sweet rice sake" but it is not quite precise for my liking😅 It is made with koji and glutanenous rice and shochu (distilled sake. I use vodka as shochu is very expensive). The way it is made is quite different from sake.
Although it is one of the most regular ingredient in Japanese recipes, very few knows why they need to use it. Most people automatically use it because it is specified in the recipe and can't explain why it can't be sugar.
This is sad because mirin is very powerful condiments to add deep flavour and unique aroma to the dish, not just sweetness. You can't just substitute it with sugar. It is different and much more refined type of sweetness. It is the absolutely must for teriyaki, dengaku sauce as well as udon/soba soup. You can easily make your cooking one rank up by just using mirin.
Also it is not well known (even among Japanese) that there is a huge difference in quality in mirin.
Mikawa mirin is the king of mirin. It is superb as a condiment but it is a wonderful drink as well (But don't be deceived. Although it is very sweet and tasty and smooth to drink, its alcohol level is as high as 14-15%). It is being served as one of the drink choice in first class of Japan Airline!
As I said, the ratio of the ingredients sound ridiculous. Too little koji and too little liquid to glutenous rice... After making mikawa mirin, I found that the top part of the rice looks very dry (pic 3). I am so tempted to top up the liquid (vodka) but hang on not to at the moment and am very curious to see how it develops!

I made a video to show the glimpses of our Christmas and new year celebrations. Our Christmas follows the western tradition and our new year is very authentic Japanese one. Sorry subtitles in the video are in Japanese but I think it is quite apparent what we are doing and celebrating😅 (it is mostly to do with food anyway)
Although I didn’t explicitly mention koji, I use koji and koji condiments almost every single dish. Hopefully you will see how versatile koji can work in both western and Japanese cuisine
I am thinking to do more koji workshops this year but if I am too slow to organise, please push my shoulder. Usually it works😅 (most of my workshops have happened in this way on request lol)
